SAKE IS JAPAN’S SIGNATURE BEVERAGE. ALTHOUGH IT IS PRODUCED MORE LIKE A BEER, IT IS TRADITIONALLY ENJOYED MORE LIKE A WINE. FERMENTED FROM SPECIFIC VARIETIES OF SAKE RICE, ITS SWEETNESS IS MEASURED IN SMV. THE LOWER THE SMV THE SWEETER THE SAKE. THE TERM JUNMAI REFERS TO SAKE PRODUCED FROM ONLY RICE, YEAST, KOJI, AND WATER, AND IS A DISTINCTION OF PURITY. THE TERMS DAIGINJO AND GINJO REFER TO THE AMOUNT THE RICE KERNEL IS POLISHED PRIOR TO FERMENTATION. THIS IS CONSIDERED A MEASURE OF QUALITY. DAIGINJO (A MINIMUM OF 60% OF THE OUTER LAYERS OF THE KERNEL HAVE BEEN REMOVED) IS SAKE’S HIGHEST FORM.
